Cod burger, why not? It´s been said that there exist 1001 ways to make salted cod in Portugal, and this recipe goes to prove it works excellent in burgers, too!

Ingredients

Cod burger
0.5 kg shredded cod Terra do Bacalhau
1 ½ garlic clove
4 mint leaves
4 basil leaves
0.4 tsp mustard
1 egg yolk
24 g grated bread
0.4 dl olive oil extra virgin
Onion stew
0.4 dl Olive oil extra virgin
1 ½ garlic cloves
160 g onion
160 g peeled tomatoes
½ star anise
0.2 dl red wine vinegar
fresh chili

How to:

Cod burger: 

  • First soak the salted, dried cod for 12 hours and drain it. Then simmer briefly in plain water. Peel and slice the garlic.
  • Place a frying pan over medium heat and let the garlic sweat in the pan for a minute. Chop mint and basil leaves and mix well together all the ingredients for the burger.

Onion stew:

  • Chop the onion and the garlic and let them sweat in the olive oil in a medium hot frying pan. Add the red wine vinegar to the mixture and cook for 2 minutes. Add peeled tomatoes and let it cook for another 15 minutes.
  • The cod burger goes great with bread and salad, topped with the onion stew.
