The smokey, cured taste of this dish adapts perfectly with the <a href=\"https:\/\/terradobacalhau.com\/en\/product\/perfect-wine-pairing-to-cured-salted-codfish-dishes-bacalhau-wine-from-paulo-laureano\/\" target=\"_blank\" rel=\"noopener noreferrer\">Portuguese red wine of Paulo Laureano. <\/a><\/p>\n<p>Serves 4<br \/>\n20 minutes<br \/>\nEasy<\/p>\n<h2>Ingredients:<\/h2>\n<p>4 <a href=\"https:\/\/terradobacalhau.com\/en\/product\/cod-bag-codfish-loins-with-no-bone-1kg\/\" target=\"_blank\" rel=\"noopener noreferrer\">cod loins Terra do Bacalhau<\/a><br \/>\nOlive oil extra virgin, to brush before grilling<br \/>\npepper<br \/>\n80 ml olive oil extra virgin, for the garlic oil<br \/>\n3 garlic cloves<br \/>\ncilantro<\/p>\n<h2>How to:<\/h2>\n<ul>\n<li><a href=\"https:\/\/terradobacalhau.com\/en\/faqs\/\" target=\"_blank\" rel=\"noopener noreferrer\">Soak the loins<\/a> according to instructions, but plan an extra day if you are planning to grill it, because the grilling tends to dry the fish meat and that highlights the salty taste.<\/li>\n<li>Pat the fish dry before brushing it with olive oil. Season with pepper.<\/li>\n<li>Grill the cod fish steaks on the greased rack of an uncovered grill directly over medium coals for 8 to 12 minutes or just until fish begins to flake easily when tested with a fork, turning once and brushing occasionally with olive oil.<\/li>\n<li>Meanwhile, prepare the garlic oil. Peel and finely slice the garlic cloves. Place a small pan with the olive oil over low heat, and add the garlic. Let the olive oil slowly absorb the taste of the garlic under supervision so it doesn&#8217;t get fried or burned.
